We’re all about fuss-free meals that pack a punch using ingredients you can find at home without heading to the shops — which is exactly what Polly’s creamy pea and bacon pasta is all about.
A crowd-pleasing, delicious meal that'll be sure to impress everyone in your bubble at home.
INGREDIENTS | Serves 5
12 large rashes of bacon (roughly 300g)
6 large garlic cloves - chopped
1 large brown onion - diced
Zest of one lemon
Juice of 1 lemon
1/2 cup creme fraiche
2 cups of peas
1 cup fresh chopped parsley
400g dried orecchiette pasta
Ready a pot of water with salt.
Chop the bacon into pieces, fry in a hot pan until just crispy. Remove the bacon and then add the onion and cook this in the oil from the bacon add some pepper & lemon zest.
Get the pasta cooking. Once the onion has been cooking for 5 mins add the garlic and lemon juice and stir.
At this point add the bacon back to the pan. Add in the frozen peas and mix everything together for a couple of minutes.
Reserve a cup of pasta water.
Stir in the creme fraiche to the peas and bacon. Add the drained pasta and as much of the pasta water as required. Fold in the remaining parsley and serve immediately with a wedge of lemon on each plate.
